Che Dau Do

Equipment

  • 1 Big pot
  • 1 Blender
  • 1 Strainer
  • 1 Pressure cooker optional

Ingredients
  

  • 11 cups water use 5 cups to boil the bean, use 6 cups to make the soup
  • 1 cup dried red beans
  • 1 cup sugar
  • ½ cup coconut milk when serving, it is optional
  • ¼ teaspoon salt

Instructions
 

  • Wash the dried red beans under cold water to remove any dirt. Now, keep the beans in a bowl and cover it with water, let it soak for 8 hours.
  • After soaking, drain the beans and rinse them with cold water.
  • Put the beans in a pot and boil it with 5 cups of water till they are soft. Keep checking to see if you may need to add more water.
  • Once the beans are soft, drain them and set them aside in a bowl.
  • Keep the pot on fire, and boil 6 cups of water, when it is boiling, add the parboiled beans and let it simmer on low heat for 15 minutes.
  • Now, add the salt and sugar and stir well till they are dissolved. Let it keep simmering for 5 more minutes.
  • Remove the pot from the stove, and let it cool down, you can start serving.
  • If you want the soup to have a thicker consistency, take about ⅓ of the soup and blend it in a high-speed blender till it is very smooth. Add the blended mix back to the soup, and let it simmer for about 10 minutes.
  • Serve the che dau do in a bowl, and enjoy. You can add a little coconut milk on top to enhance the flavor and make it more creamy.
