Equipment
- Non-stick skillet or cast iron pan
- Mixing bowls (at least 2)
- Cutting board and sharp knife
- Measuring spoons and cups
- Tongs or spatula
Ingredients
For the Shrimp:
- 1 lb large shrimp peeled and deveined
- 1 tablespoon olive oil
- Juice of 1 lime
- 2 garlic cloves minced
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
For the Slaw:
- 2 cups shredded green cabbage or mix green & red cabbage
- 1/2 red onion thinly sliced
- 1 jalapeño thinly sliced (optional, for extra heat)
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- Salt to taste
For the Chipotle Crema:
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 chipotle pepper in adobo sauce minced or 1/2 teaspoon chipotle chili powder
- Juice of 1/2 lime
- Salt to taste
To Serve:
- 8 small corn tortillas
- 1 avocado sliced or diced
- Extra lime wedges for garnish
Instructions
Marinate the Shrimp:
- In a bowl, combine the shrimp with olive oil, lime juice, minced garlic, chili powder, cumin, salt, and pepper.
- Toss well to ensure all shrimp are evenly coated.
- Let marinate for about 10 minutes while you prep the other ingredients.
Prepare the Slaw:
- In another bowl, combine the shredded cabbage, sliced red onion, jalapeño, and cilantro.
- Drizzle with lime juice and sprinkle a pinch of salt.
- Toss gently and set aside to allow the flavors to meld.
Make the Chipotle Crema:
- In a small bowl, mix the sour cream, mayonnaise, minced chipotle pepper (or chipotle chili powder), lime juice, and a pinch of salt.
