Ingredients
  

For the Shrimp:

  • 1 lb large shrimp peeled and deveined
  • 1 tablespoon olive oil
  • Juice of 1 lime
  • 2 garlic cloves minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

For the Slaw:

  • 2 cups shredded green cabbage or mix green & red cabbage
  • 1/2 red onion thinly sliced
  • 1 jalapeño thinly sliced (optional, for extra heat)
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • Salt to taste

For the Chipotle Crema:

  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 chipotle pepper in adobo sauce minced or 1/2 teaspoon chipotle chili powder
  • Juice of 1/2 lime
  • Salt to taste

To Serve:

  • 8 small corn tortillas
  • 1 avocado sliced or diced
  • Extra lime wedges for garnish

Instructions
 

Marinate the Shrimp:

  • In a bowl, combine the shrimp with olive oil, lime juice, minced garlic, chili powder, cumin, salt, and pepper.
  • Toss well to ensure all shrimp are evenly coated.
  • Let marinate for about 10 minutes while you prep the other ingredients.

Prepare the Slaw:

  • In another bowl, combine the shredded cabbage, sliced red onion, jalapeño, and cilantro.
  • Drizzle with lime juice and sprinkle a pinch of salt.
  • Toss gently and set aside to allow the flavors to meld.

Make the Chipotle Crema:

  • In a small bowl, mix the sour cream, mayonnaise, minced chipotle pepper (or chipotle chili powder), lime juice, and a pinch of salt.
  • Stir until smooth. Adjust seasoning to taste.

Cook the Shrimp:

  • Heat a non-stick skillet over medium-high heat.
  • Add the marinated shrimp to the hot pan.
  • Cook for about 2-3 minutes per side until shrimp are pink and opaque. Avoid overcooking to keep them tender.

Warm the Tortillas:

  • While the shrimp cooks, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in a damp cloth and microwave for 20-30 seconds.

Assemble the Tacos:

  • Place a few shrimp on each warm tortilla.
  • Top with a generous scoop of cabbage slaw.
  • Drizzle with chipotle crema.
  • Add avocado slices and garnish with extra cilantro and a squeeze of lime juice.
