Cottage cheese flatbread is the soft, slightly chewy flatbread with a subtle tang from the cottage cheese that is perfect for wraps, dipping, or just enjoying warm with a little butter. It is one of the most enjoyable cottage cheese food item that is enjoyed in different ways.

Made from very simple and few ingredients that you most likely already have in your pantry. What makes this flatbread special is the cottage cheese. Instead of using on milk, butter, or yogurt, the cottage cheese is used to add moisture and a boost of protein while giving the flatbread a tender texture. Even if you’re not a huge fan of cottage cheese on its own, the flatbread is actually really awesome and you’d love it. There are actually different ways to make this flatbread asides the standard traditional method. Some people introduce some fresh herbs, garlic powder, or even a sprinkle of shredded cheese. All of these boosts the flavors in different ways.

Equipment

  • Mixing Bowl
  • Fork or spatula
  • Rolling Pin
  • Non-stick skillet or griddle
  • Measuring cups and spoons

Ingredients
  

  • 1 cup cottage cheese small curd
  • 1 ¼ cups all-purpose flour plus extra for dusting
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon Greek yogurt optional, for extra softness

Instructions
 

Mix the dough:

  • In a bowl, combine cottage cheese, flour, baking powder, and salt. Mix with a fork until it forms a shaggy dough. Add olive oil and Greek yogurt (if using) and knead into a soft, slightly sticky dough.

Rest the dough:

  • Let the dough rest for 5 minutes to allow the flour to hydrate.

Divide & Roll:

  • Dust a surface with flour. Divide the dough into 4 equal portions and roll each one into a thin circle, about ⅛-inch thick.

Cook the flatbread:

  • Heat a non-stick skillet over medium heat. Cook each flatbread for 1-2 minutes per side, until golden brown spots appear and it puffs slightly.

Serve & Enjoy:

  • Brush with a little olive oil or butter and serve warm with dips, spreads, or as a wrap!
