Lovely Peach Cobbler Recipe

Peach cobbler is one of the few desserts that really feels special to me, it’s one of my very go-to desserts I make during the season and I do it because it is simple but really tasty and healthy.

The way I make mine that makes it really good, everyone who tries it want to have more, involves the peaches not being buried under heavy crust, instead, the toppings are baked into little golden pockets.

Straight from the oven, the cobbler smells like pure heaven. The peaches send out this sweet aroma that mixes with the buttery crust, and honestly, it’s hard for me to wait until it cools. I just want to dig in. The first spoonful is always the best, steaming fruit with a golden bite of crust, sometimes crisp, sometimes tender, depending on where your spoon lands. That little unpredictability makes it more fun to eat.

If you want to make your peach cobbler feel even much more special, introduce a scoop of vanilla ice cream or a dollop of whipped cream. The cold cream melting into the warm cobbler is one of those little joys I guarantee you won’t forget. Each spoonful is creamy, sweet, warm, and refreshing all at once.

Equipment

  • 1 9x13 inch baking dish
  • Mixing Bowl
  • Whisk
  • Measuring cups and spoons
  • Pastry blender or fingers

Ingredients
  

  • 3 cups fresh peaches sliced (450g)
  • 1/2 cup granulated sugar 100g
  • 2 tablespoons all-purpose flour 30g
  • 1/4 teaspoon salt 1g
  • 1/2 cup unsalted butter melted (115g)
  • 1/2 cup all-purpose flour 60g
  • 1/2 cup granulated sugar 100g
  • 1/4 teaspoon salt 1g
  • 1/2 cup heavy cream or milk 120ml
  • 2 eggs beaten (120g)
  • 1 teaspoon vanilla extract 5g

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a large mixing bowl, combine the sliced peaches, granulated sugar, flour, and salt. Let it sit for about 15 minutes, until the peaches start to release their juice.
  • In a separate bowl, whisk together the melted butter, flour, sugar, and salt. Add the heavy cream or milk, beaten eggs, and vanilla extract. Whisk until smooth.
  • Pour the peach mixture into the 9x13 inch baking dish.
  • Drop the batter by spoonfuls onto the peach mixture.
  • Bake for 40-45 minutes, or until the crust is golden brown and the peaches are tender.
  • Serve warm, topped with vanilla ice cream or whipped cream if desired.
