If I had to pick one meal that never lets me down, it would be a big pot of chicken noodle soup. It’s the kind of meal that just feels right no matter the time of year. Whether it’s a slow Sunday or one of those nights when you don’t want to fuss over dinner, this soup gets the job done. Long story short, I love me some chicken noodle soup and everything about it.
To make chicken noodle soup, I usually start with a pound of boneless, skinless chicken thighs or breast. Sometimes I use both. I’m not picky. Then I pour in about four cups of chicken broth. That’s when the smell starts creeping through the kitchen. It’s not even done yet, but you can already tell it’s going to taste good. Ingredients
- 1 pound boneless skinless chicken breast or thighs (450g)
- 4 cups chicken broth 960ml
- 1 medium onion chopped (120g)
- 2 cloves garlic minced (6g)
- 2 carrots peeled and chopped (120g)
- 2 celery stalks chopped (120g)
- 1 teaspoon dried thyme 5g
- 1/2 teaspoon dried basil 2g
- 1/2 teaspoon salt 2g
- 1/4 teaspoon black pepper 1g
- 8 ounces egg noodles 225g
Instructions
- In a large pot, sauté the chopped onion, garlic, carrots, and celery in a little bit of oil until tender.
- Add the chicken, chicken broth, thyme, basil, salt, and pepper to the pot.
- Bring the mixture to a boil, then reduce the heat and let simmer for 10-12 minutes or until the chicken is cooked through.
- Add the egg noodles to the pot and cook for an additional 8-10 minutes or until they are tender.
- Remove the pot from the heat and let it cool for a few minutes.
- Use two forks to shred the chicken into bite-sized pieces.
- Serve the soup hot, garnished with chopped fresh herbs if desired.
