Equipment

  • Aluminum foil or parchment paper
  • Toothpicks
  • Small mixing bowl
  • Measuring spoons

Ingredients

  • 1 pound 16 oz of little smokies sausages
  • 12 slices of bacon cut into thirds
  • 1 cup brown sugar
  • 2 tablespoons maple syrup optional, for extra flavor
  • 1/2 teaspoon smoked paprika optional, for a smoky kick

Instructions

Preheat the Oven:

  • Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil or parchment paper for easy cleanup.

Prepare the Bacon and Smokies:

  • Cut each slice of bacon into thirds to ensure they’re just the right size to wrap around the smokies.
  • Wrap each little smoky with a piece of bacon and secure it with a toothpick.

Coat with Brown Sugar:

  • In a small bowl, mix the brown sugar and smoked paprika (if using).
  • Roll each bacon-wrapped smoky in the sugar mixture to coat evenly. For a sweeter glaze, drizzle maple syrup over the wrapped smokies once placed on the baking sheet.

Arrange on Baking Sheet:

  • Place the coated smokies seam-side down on the prepared baking sheet, ensuring they are not touching.

Bake:

  • Bake in the preheated oven for 30-35 minutes, or until the bacon is crispy and caramelized. Check them halfway through and rotate the pan for even cooking.

Cool and Serve:

  • Let the smokies cool for about 5 minutes before serving. They are perfect warm but can be served at room temperature too.
