- 2 chicken breasts sliced thinly
- 3 cups mixed vegetables bell peppers, broccoli, carrots
- 3 tablespoons soy sauce
- 2 cloves garlic minced
- 1 tablespoon fresh ginger minced
- 2 cups cooked rice
- 1 tablespoon vegetable oil
Heat oil in a large skillet or wok over medium-high heat. Add garlic and ginger, sauté for 1 minute.
Add the chicken slices, cook until browned and cooked through, about 5-7 minutes.
Add the mixed vegetables and stir-fry until tender, about 5-7 minutes.
Add soy sauce, stir to coat all ingredients evenly.
