For Salad
- 2 head of soft lettuce
- 1 Persian cucumber thinly sliced
- 1 Avocado thinly sliced
- ¼ cup of microgreens
- ¼ cup of Parmesan cheese shaved
- 2 tablespoons of pepitas
- ½ cup of raw almonds if you want
- ½ tablespoon of tamari
For Dressing
- ¼ cup fresh lemon juice
- 1 small garlic clove grated
- 1 teaspoon Dijon mustard
- ¼ teaspoon sea salt more to taste
- Freshly ground black pepper
- ¼ to ⅓ cup extra-virgin olive oil
- ½ teaspoon honey or maple syrup, optional
For the Dressing
In a bowl, add lemon juice, garlic, mustard, salt, pepper, and honey. Whisk together properly, and drizzle in the olive oil whilst whisking. Keep on whisking until the mixture is emulsified.
For the Almonds
Preheat your oven to 350°F (or 175°C). Line a baking sheet with parchment paper, set the almonds on the sheet, and coat lightly with tamari.
Bake for 10-15 minutes, or until browned. Remove from the oven and allow to cool for about 5 minutes.
For the Salad
Pull the lettuce leaves apart, wash and set them on a kitchen towel for a few minutes to allow them to dry well.
In a large bowl, add the lettuce leaves and drizzle a few spoonfuls of the salad dressing. Toss the leaves until the dressing is incorporated well.
Add in the cucumber, avocado, Parmesan cheese, pepitas, and roasted almond. Drizzle more dressing on the salad and toss everything together making sure the dressing coats everything well.
