- 2 medium acorn squashes halved and seeds removed
- 2 tbsp olive oil
- 2 tbsp maple syrup
- 1 tsp ground cinnamon
- ½ tsp nutmeg
- Salt and black pepper to taste
- Optional garnish: Chopped pecans or fresh thyme
Preheat the oven: Set your oven to 400°F (200°C).
Prepare the squash: Halve the acorn squashes and scoop out the seeds using a spoon. Place them cut-side up on the baking sheet.
Make the glaze: In a mixing bowl, whisk together olive oil, maple syrup, cinnamon, nutmeg, salt, and pepper.
Brush the squash: Use a basting brush to generously coat the inside and edges of each squash half with the glaze.
