Ingredients
  

  • 6 large eggs
  • 1/4 cup milk whole or any preferred type
  • 1 cup fresh spinach roughly chopped
  • 1/2 cup mushrooms thinly sliced
  • 1/4 cup onion finely chopped
  • 1/4 cup shredded cheddar cheese or any cheese of choice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil or butter

Instructions
 

Preheat the Oven:

  • Set the oven to 375°F (190°C).

Prepare the Egg Mixture:

  • In a medium mixing bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper. Set aside.

Cook the Vegetables:

  • Heat olive oil in the skillet over medium heat.
  • Add the onions and sauté for 2–3 minutes until softened.
  • Stir in the mushrooms and cook for an additional 3–4 minutes until tender.
  • Add the spinach and cook until just wilted, about 1–2 minutes.

Assemble the Frittata:

  • Pour the egg mixture over the vegetables in the skillet, ensuring it spreads evenly.
  • Sprinkle shredded cheese on top.

Cook on the Stovetop:

  • Reduce the heat to low and cook for 5–6 minutes, allowing the edges to set while the center remains slightly runny.

Bake in the Oven:

  • Transfer the skillet to the preheated oven and bake for 8–10 minutes, or until the frittata is fully set and lightly golden on top.

Cool and Serve:

  • Remove the skillet from the oven (use oven mitts!) and let the frittata cool for 5 minutes.
  • Slice into wedges and serve warm.
