Equipment

  • Small mixing bowl or jar with a lid
  • Whisk or fork
  • Microplane or garlic press (optional, for mincing garlic)

Ingredients

  • 1/4 cup fresh lemon juice about 2 medium lemons
  • 1/2 cup extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 clove garlic finely minced
  • 1 tsp honey or maple syrup optional, for sweetness
  • 1/4 tsp sea salt or to taste
  • 1/8 tsp freshly ground black pepper or to taste

Instructions

Prepare the Ingredients

  • Juice the lemons to yield 1/4 cup of fresh juice.
  • Mince the garlic if not already done.

Combine the Ingredients

  • In a small bowl or jar, add the lemon juice, Dijon mustard, minced garlic, honey (if using), salt, and pepper.

Emulsify the Dressing

  • Slowly drizzle in the olive oil while whisking vigorously, or add all ingredients to a jar, seal it tightly, and shake vigorously until the dressing is well combined and emulsified.

Taste and Adjust

  • Taste the vinaigrette and adjust seasoning if needed (e.g., more salt, pepper, or a touch more sweetness).

Serve and Store

  • Use immediately over salads, roasted vegetables, or as a marinade.
  • Store leftover dressing in an airtight container in the refrigerator for up to 1 week. Shake well before each use, as separation is natural.
