Ingredients
  

  • 6 bone-in with skin-on chicken thighs
  • 4 tablespoons unsalted butter
  • 6 garlic cloves minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes optional
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley chopped (for garnish)

Instructions
 

Prepare the Chicken:

  • Pat the chicken thighs dry with a paper towel.
  • In a small bowl, mix salt, black pepper, paprika, thyme, oregano, onion powder, and red pepper flakes.
  • Rub the seasoning mixture all over the chicken thighs.

Sear the Chicken:

  • Heat olive oil in a large skillet over medium-high heat.
  • Place the chicken thighs skin-side down and sear for 6-7 minutes until the skin is golden brown and crispy.
  • Flip and cook the other side for 3-4 minutes.

Make the Garlic Butter Sauce:

  • Reduce the heat to medium-low.
  • Add butter and minced garlic to the skillet. Stir for 1 minute until fragrant.
  • Pour in lemon juice and stir to combine.

Finish Cooking:

  • Spoon the garlic butter over the chicken.
  • Cover the skillet and let the chicken cook for another 10 minutes until fully cooked (internal temperature should be 165°F / 75°C).

Serve:

  • Remove from heat and garnish with fresh parsley.
  • Serve with mashed potatoes, rice, or roasted vegetables.
