Main Ingredients:
- 1 lb 450g Italian sausage (mild or spicy)
- 1 small onion diced
- 3 cloves garlic minced
- 2 carrots sliced
- 2 celery stalks chopped
- 1 14.5 oz can diced tomatoes
- 4 cups 1 liter chicken broth
- 1 cup water
- 1 15 oz can cannellini beans, drained and rinsed
- 1 zucchini diced
- 2 cups fresh spinach or kale
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes optional for extra heat
- Salt and black pepper to taste
- 1 tablespoon olive oil
Brown the Sausage:
Heat olive oil in a large pot over medium heat.
Add Italian sausage and cook until browned, breaking it into small crumbles. Remove excess grease if needed.
Sauté the Vegetables:
Add diced onions, carrots, and celery to the pot. Sauté for about 5 minutes until softened.
