For the Salad:
- 12 oz 340g rotini or any short pasta of your choice
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- 1 cup mozzarella pearls or cubed fresh mozzarella
- 1/2 cup black or Kalamata olives sliced
- 1/4 cup red onion thinly sliced
- 1/4 cup pepperoncini optional, sliced
- 1/2 cup salami diced or julienned
- 1/4 cup freshly chopped parsley or basil optional, for garnish
For the Dressing:
- 1/3 cup extra-virgin olive oil
- 3 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp salt or to taste
- 1/4 tsp black pepper or to taste
- Pinch of red pepper flakes optional, for a spicy kick
Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions (usually about 8-10 minutes) until al dente.
