- 1¼ cup of all-purpose flour
- 2 tablespoons of brown sugar
- 2 teaspoons of baking powder
- 1 teaspoon of ground cinnamon
- ¼ teaspoon of kosher salt
- ¼ teaspoon of ground ginger
- ¼ teaspoon of nutmeg
- ⅛ teaspoon of ground cloves
- ½ cup of canned pumpkin
- 1 cup of buttermilk
- 2 tablespoons of melted butter
- 1 teaspoon of pure vanilla extract
- 1 large egg
- Maple syrup and butter for serving
In a large bowl, whisk together all the dry ingredients: flour, baking powder, brown sugar, cinnamon powder, nutmeg, ground cloves, salt, and ground ginger. Make sure they're properly mixed.
In another bowl, whisk together all the wet ingredients: buttermilk, pumpkin, melted butter, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients, and stir till it is combined and make sure you avoid over-mixing.
Get your skillet over medium heat, and spray with a nonstick cooking spray, now pour about ⅓ cup of batter onto the heated pan. Allow to cook for about 2-3 minutes until bubbles begin to form, and flip the pancake over, and cook for another 2-3 minutes. Repeat this process over and over again until you've made all the pancakes.
