Toss the fennel seed, oregano, rosemary, red pepper flake, peppercorns, and salt to a blender, and blend till it has a coarse texture.
Get your pork meat, and pat it dry with paper towels, then coat it with the seasoning blend you just made.
Get a large skillet over medium heat, pour in the olive oil, and allow to heat up, then place the pork roast in it and cook until each side is browned. Then set it aside whilst preserving the oil as it is still needed.
Prep your veggies, chop the garlic into tiny pieces, then peel the carrots and cut into 3 pieces each.
Get your slow cooker, place the potatoes and carrots in it, then place the browned pork meat in it.
Now, go back to the skillet and place it on medium heat, then sauté the chopped garlic in the remaining oil until it is fragrant (about 1 minute).
Pour the chicken stock and white wine into the skillet, then properly mix together. Allow this to cook for about 5-7 minutes.
Now, pour this mixture over the pork roast, potatoes, and carrots that are in the slow cooker.
Cover the lid, and cook on high heat for 4 hours.
Now, flip the roast, and keep on cooking on high for 2 more hours. After this, check the internal temp using your thermometer and make sure it is at least 165°F or 75°C.
Now, just stir in the red wine vinegar. This is also the time to taste for seasoning, and you can adjust as you see fit if you're not satisfied.
Shred the pork roast and viola! Your tender and flavorful slow cooker Italian pork roast is ready to be devoured.
Serve and enjoy! If you have fresh basil or parsley, you can use it to garnish the dish.
