For Salad
- 3 cups of fresh pineapple chunks
- 2 cups of mandarin orange sections
- 2 cups of kiwi chunks
- 1 cup of pomegranate arils
- 1 cup of blueberries optional
For Dressing
- 3 tablespoons of honey
- 3 tablespoons lime juice or lemon juice
- 1 tablespoon of poppy seeds optional
- Fresh mint leaves as garnish
In a bowl, add in the honey, lime juice, and poppy seeds, whisk until they're combined.
In a serving, add in all the salad ingredients (all the fruits), and pour the dressing over them.
Toss to make sure the dressing coats the fruits properly. Cover and refrigerate for a few hours before serving.
