Here are the ingredients you need to prepare this delicious recipe at home.

  • 30-40 saltine crackers
  • 1 cup of unsalted butter
  • 1 cup of brown sugar
  • 2 cups of semi-sweet chocolate chips
  • 1 teaspoon of vanilla extract
  • 1 cup of roasted pecans, chopped, optional
  • 2 tablespoons of holiday sprinkles, optional

Instructions on Preparing Cracker Toffee Cookie

Here are the step-by-step instructions on how to prepare the delicious Christmas toffee at home.

Step 1: Preheat your oven to 400°F (or 200°C).

Step 2: Line a baking sheet with parchment paper, and spray with a nonstick cooking spray.

Step 3: Arrange the crackers onto the sheet with the salted side down, and tightly packed together. 

Step 4: In a saucepan over medium heat, add in the butter and sugar, stir for about 5 minutes until well mixed, then take off the heat and stir in the vanilla extract.

Step 5: Pour over the crackers in the sheet and spread evenly all through. Bake for 5-7 minutes and remove from the oven.

Step 6: Sprinkle the chocolate chips over the crackers, and allow it to sit for about 5 minutes till it is softened. Now, evenly spread the softened chocolate across the top of the crackers.

Step 7: Sprinkle on the chopped pecans, holiday sprinkles, or any other toppings you prefer.

Step 8: Place in a freezer for about 5 minutes till it is hardened.

Step 9: Viola! Your delightful cracker toffee cookie is ready, break it into smaller pieces and serve it on a plate.

Notes:

  • If the chocolate isn’t softened when spread over the crackers, you can pop it back into the oven for a few minutes till it’s melted and spread after that.

If you’re fortunate enough to have leftovers;

  • Place in an airtight container and store in a cool, dry place for up to 1 week. You can store it in a refrigerator instead for up to 2 weeks.
