Homemade Cowboy Candy Recipe

Homemade Cowboy Candy Recipe

Cowboy candy, also known as candied jalapeños, is a sweet and spicy treat that’s gained popularity for its unique flavor profile. This delightful condiment is made by simmering sliced jalapeños in a sugary syrup until they become tender and infused with sweetness. The result is a perfect balance between the heat of the peppers and the sugary glaze, offering a taste that’s both fiery and sweet.

In terms of taste, cowboy candy is a versatile addition to various dishes. It adds a burst of flavor to sandwiches, burgers, tacos, and even cheese boards. The heat from the jalapeños is mellowed by the sweetness, making it enjoyable for those who like a bit of spice without overwhelming their palate.

I’ll be guiding you to make the tastiest cowboy candy by following this simple-to-follow cowboy candy recipe.

Equipment

  • Sharp knife or mandoline
  • Cutting board
  • Large pot or saucepan
  • Slotted spoon
  • Stirring spoon
  • Measuring cups and spoons
  • Sterilized canning jars with lids and bands
  • Canning funnel (optional but helpful)
  • Tongs or jar lifter
  • Water bath canner (optional, for long-term storage)

Ingredients

  • 1 1/2 pounds fresh jalapeño peppers
  • 4 cups granulated sugar
  • 1 cup apple cider vinegar
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon celery seed
  • 1 tablespoon mustard seeds
  • 1/4 teaspoon ground cayenne pepper optional, for extra heat

Instructions

Prepare the Jalapeños:

  • Wear gloves to avoid irritation. Slice the jalapeños into thin, even rings using a sharp knife or mandoline. Discard the stems but keep the seeds if you like extra heat.

Make the Syrup:

  • In a large pot or saucepan, combine the sugar, apple cider vinegar, turmeric, celery seed, mustard seeds, and cayenne pepper. Stir well to mix.
  • Bring the mixture to a boil over medium heat, then reduce the heat to low. Simmer for about 5 minutes, stirring occasionally, until the sugar is fully dissolved and the syrup is slightly thickened.

Cook the Jalapeños:

  • Add the sliced jalapeños to the pot, stirring them into the syrup. Bring the mixture back to a boil, then reduce the heat and simmer for 4-5 minutes. The jalapeños should be slightly softened but still retain their shape.

Jar the Cowboy Candy:

  • Using a slotted spoon, transfer the jalapeños to sterilized canning jars, packing them in tightly. Leave about 1/4 inch of headspace at the top of each jar.
  • Pour the hot syrup over the jalapeños, ensuring they are fully covered. If needed, use a canning funnel to avoid spills. Remove any air bubbles by gently tapping the jars or using a non-metallic utensil.
  • Wipe the rims of the jars with a clean, damp cloth, then place the lids on top and screw on the bands until fingertip-tight.

Process the Jars (Optional for Long-Term Storage):

  • If you plan to store the cowboy candy for an extended period, process the jars in a boiling water bath for 10 minutes. Use tongs or a jar lifter to carefully lower the jars into the canner, ensuring they are fully submerged.
  • After processing, remove the jars and let them cool on a towel or wire rack. Listen for the "ping" of the lids sealing as they cool. Any unsealed jars should be refrigerated and used first.

Cool and Store:

  • Allow the jars to cool completely at room temperature. Store in a cool, dark place for at least 2 weeks before opening to allow the flavors to develop. Once opened, store in the refrigerator.

Notes

Serving Suggestions:

Cowboy candy is a versatile condiment that can be used in various ways:
  • Add to sandwiches, burgers, or hot dogs for a sweet and spicy kick.

  • Use as a topping for grilled meats or tacos.

Nutritionally, cowboy candy is a mixed bag. While jalapeños themselves are low in calories and rich in vitamins A and C, the added sugar in the syrup increases the calorie count. A small serving can pack a lot of flavor without a huge calorie load, but it should be consumed in moderation, especially for those watching their sugar intake. Cowboy candy is a flavorful way to enjoy jalapeños, perfect for adding a kick to your meals.
