Ingredients
  

For the Carrot Cake:

  • 2 cups 250g all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup 200g granulated sugar
  • 1 cup 240ml vegetable oil
  • 4 large eggs at room temperature
  • 2 cups 200g grated carrots
  • 1/2 cup 75g chopped walnuts or pecans (optional)
  • 1/2 cup 60g shredded coconut (optional)
  • 1 teaspoon vanilla extract

For the Cream Cheese Frosting:

  • 8 oz 225g cream cheese, softened
  • 1/2 cup 115g unsalted butter, softened
  • 4 cups 480g powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, then line the bottoms with parchment paper for easy removal.

Prepare the Carrot Cake Batter:

  • In a large mixing bowl, sift together the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  • In another mixing bowl, whisk together the granulated sugar, vegetable oil, and eggs until smooth.
  • Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
  • Stir in the grated carrots, chopped nuts (if using), shredded coconut (if using), and vanilla extract until evenly distributed throughout the batter.

Bake the Carrot Cake:

  • Divide the batter evenly between the prepared cake pans.
  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

  • Spread a layer of cream cheese frosting evenly over the top of the first cake layer.
  • Carefully place the second cake layer on top of the frosting.
