In a large mixing bowl, combine the mashed bananas, granulated sugar, melted butter or coconut oil, eggs, and vanilla extract. Mix until well combined.
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix, as this can result in a dense banana bread.
If desired, fold in any optional add-ins such as chopped nuts, chocolate chips, or dried fruit.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
