Instructions
Prepare the Dough:
In a large mixing bowl, combine the warm milk and active dry yeast. Let it sit for about 5 minutes until the yeast is foamy.
Add the granulated sugar, melted butter, eggs, salt, and 4 cups of flour to the bowl. Mix until a soft dough forms. If using a stand mixer, knead the dough with the dough hook attachment for about 5-7 minutes. If kneading by hand, transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic, adding more flour as needed.
Place the dough in a greased bowl, cover with a kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.
Prepare the Filling:
In a small bowl, mix together the softened butter, brown sugar, and ground cinnamon until well combined. Set aside.
Assemble the Cinnamon Rolls:
Punch down the risen dough and transfer it to a floured surface. Roll out the dough into a rectangle, about 16x20 inches in size.
Spread the cinnamon sugar filling evenly over the dough, leaving a small border around the edges.
Starting from one long edge, tightly roll up the dough into a log. Pinch the seam to seal.
Use a sharp knife to slice the log into 12 equal-sized rolls.
Bake the Cinnamon Rolls:
Place the cinnamon rolls in a greased 9x13 inch baking dish, leaving space between each roll for them to expand.
Cover the dish with a kitchen towel or plastic wrap and let the rolls rise for another 30-45 minutes, until puffy.
Preheat the oven to 350°F (175°C). Once preheated, bake the cinnamon rolls for 20-25 minutes, or until golden brown and cooked through.
Prepare the Cream Cheese Icing:
In a small mixing bowl, beat together the softened cream cheese and butter until smooth and creamy.
Add the powdered sugar and vanilla extract, and continue to beat until well combined. If the icing is too thick, add milk, one tablespoon at a time, until you reach your desired consistency.
Frost the Cinnamon Rolls:
Once the cinnamon rolls are baked and slightly cooled, spread the cream cheese icing evenly over the warm rolls.
